Pernil de Porco com Pimentões Agridoce

Você vai se surpreender com a forma como duas coisas tão simples podem ficar tão bem juntas. O doce e azedo dos pimentões com um pernil de porco  para uma boa e rápida refeição. Como sempre, quando fritar o pernil, deixe-o descansar após cozinhá-lo para que ele possa ficar macio e reabsorver seu suco.

Você vai precisar de:

  • 1 “bifão Tom e Jerry” de pernil de porco, cerca de 300g/400g
  • Azeite, para fritar
  • 1 cabeça de alho, com a pele, esmagado
  • Um pouco de alecrim
  • 25g de manteiga

Para os pimentões você vai precisar de:

  • Azeite, para fritar
  • 1 cebola roxa, descascada e cortada
  • 1 pimentão verde, sem sementes e em fatias finas
  • 1 pimentão amarelo, sem sementes e em fatias finas
  • Sal marinho e pimenta do reino moída
  • 1 colher de sopa de açúcar refinado
  • 3 colheres de sopa de vinagre de vinho tinto
  • 1 colher de sopa de azeite extra virgem
  • folhas de manjericão para picar

1. Primeiro prepare os pimentões. Aqueça um pouco de azeite em uma frigideira grande, em seguida, adicione a cebola e pimentões. Tempere com sal e pimenta, adicione o açúcar e refogue em fogo alto por 4-5 minutos, até ficar macio e colorido.
2. Adicione o vinagre e deixe borbulhar por um minuto ou dois até que tenha reduzido, pois os pimentões são suaves.  Abaixe o fogo, acrescente a colher de sopa de azeite extra-virgem e cozinhar durante mais 2-3 minutos. Junte o manjericão picado e continue a cozinhar por 30 segundos, em seguida, desligue o fogo. Reserve em uma tigela.
3. Tempere o pernil muito bem em ambos os lados, empurrando o tempero na carne.
4. Coloque a frigideira em fogo alto até ficar bem quente e adicione um pouco de óleo. Adicionar o pernil, alho e alecrim e frite por 2-3 minutos, até colorido. Vire e frite por um mais 2-3 minutos, do outro lado, empurrando o alecrim sob as costeletas e rompendo o alho um pouco.

5. No final do tempo de cozimento, adicione dois botões de manteiga e regue as costeletas com ele como eles estão cozinhando, para acelerar o processo de cozimento e manter o pernil úmido. (Empurre o borda graxos das costeletas para o fundo da panela para ajudar a tornar a gordura.) Aperte a alho fora de sua pele e local com as ervas em cima do pernil.
6. Transfira o pernil para um prato, e descanse por 5-10 minutos.
7. Sirva o pernil com os pimentões com os sucos de descanso.
